The Regulatory Council PDO Calatayud is in charge of the management of the PDO.

Calatayud is one of Spain’s most arid regions, but elevations ranging from 1,000 to 3,600 feet and high diurnal temperature variation help promote flavor development in limestone and slate soils. Both red and white Garnacha grapes are grown here to make red, white, and rosé wine. Reds are typically full bodied and rich, with black fruit and mineral characteristics shining through, particularly in wines made under the designation Superior Calatayud, which requires that red wines be made from a minimum of 85 percent red Garnacha from low-yield vines that are at least 50 years old.
